Chicken, boneless400 g boneless, cubed
Egg1
Cornflour (cornstarch)4 tbsp, split
Maida (all-purpose flour, plain flour)1½ tbsp
Ginger garlic paste1 tbsp
Soy sauce2 tbsp, split
Black pepper½ tsp
Cooking oil (vegetable oil)for frying, about 4 tbsp absorbed
Garlic4 cloves, chopped
Green chilli3, slit
Onion1 large, cut into petals
Capsicum (green capsicum, green bell pepper)1, cubed
Red chilli sauce1½ tbsp
Vinegar2 tsp
Water⅓ cup
Spring onion (green onion, scallion)2 stalks, chopped

- 1Mix chicken with egg, 3 tbsp cornflour, maida, ginger garlic paste, 1 tsp soy sauce, pepper and salt. Rest 15 minutes.
- 2Deep or shallow fry in hot oil in batches for 5 to 6 minutes, until crisp and cooked through with no pink inside.
- 3In 1 tbsp of the oil on high, fry garlic and green chillies, then onion and capsicum for 1 to 2 minutes.
- 4Add remaining soy sauce, chilli sauce and vinegar. Stir the remaining cornflour into the water, pour in and bubble until glossy.
- 5Toss in the chicken and spring onions for 30 seconds and serve straight away.
Serve it like thisServe hot on a plate, with a few fresh coriander leaves on top.
