Ingredients

4 servings
Cooked rice3 cups, cooled
Lemon juice2 tbsp, about 1 large lemon
Cooking oil (vegetable oil)2 tbsp
Peanuts2 tbsp
Chana dal (split chickpeas)1 tbsp
Urad dal (split black gram)1 tsp
Mustard seeds1 tsp
Green chilli2 or 3, slit
Ginger1.5 cm, chopped
Curry leaves1 sprig
Turmeric (ground turmeric)¼ tsp
Asafoetidaa pinch
Fresh grated coconut2 tbsp
Coriander leaves (cilantro)a small handful
Saltto taste

Method

4 steps
  1. 1Spread the cooled rice in a wide plate and sprinkle with salt. Fluff with your fingers.
  2. 2Heat oil and add peanuts, mustard seeds, chana dal, urad dal, chillies, ginger, curry leaves and asafoetida.
  3. 3Lower the heat, add turmeric, then tip in the rice straight away. Toss gently.
  4. 4Switch off. Add lemon juice, coconut and coriander. Toss and taste.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
