Ingredients

4 servings
Beefbrisket, and offal if you like
Water2 litres, ideally rice washing water
Peanutsroasted and ground
Shallots10, some fried for topping
Garlic8 cloves
Lemongrass2 stalks
Galangala thumb
Gingera thumb
Coriander seeds1 tbsp
Cumin seeds1 tsp
Black pepper1 tsp
Nutmega grating
Bay leaf (indian bay leaf)salam or bay
Cooking oil (vegetable oil)1½ tbsp
Salt1½ tsp
Palm sugar (gula melaka)2 tsp
Cooked riceketupat or lontong
Lemonlime wedges
Spring onion (green onion, scallion)sliced

Method

5 steps
  1. 1Boil the beef 5 minutes, discard the water and simmer in fresh rice water for 90 minutes until tender.
  2. 2Toast the coriander, cumin and pepper, then blend with the shallots, garlic, ginger and nutmeg.
  3. 3Fry the paste with the lemongrass, galangal and salam for 6 minutes.
  4. 4Add the paste, ground peanuts and cubed beef to the broth and simmer 30 minutes. Season with salt and palm sugar.
  5. 5Serve with ketupat, lime, spring onion and fried shallots.
Serve it like this

Serve in small bowls with ketupat cubes on the side, lime and sambal tauco at the table.
