Ingredients

Whole wheat bread (wholemeal bread)8 slices, crusts removed

Ghee4 tbsp

Sugar⅔ cup, divided

Water½ cup

Cardamom½ tsp

Saffrona pinch

Milk3 cups, full cream

Almonds10, sliced

Cashews10, halved

Pistachios1 tbsp, slivered

Method

5 steps

1Cut the bread into triangles and fry in ghee on medium heat until golden on both sides. Drain.
2Boil 100 g sugar with the water, cardamom and saffron for about 5 minutes.
3Boil the milk in a heavy pan, stirring, until it reduces by half. Stir in the remaining sugar.
4Dip each piece of bread in the syrup and arrange in a wide pan. Pour the reduced milk over and cook on low until mostly absorbed.
5Fry the nuts in a little ghee and scatter on top. Serve warm or chilled.
