Ingredients

4 servings
Potato1 large, cubed
Green beansa handful, cut
Ngari2 tbsp
Dried red chilli6 to 8, or to taste
Spring onion (green onion, scallion)2 stalks, chopped
Coriander leaves (cilantro)a small handful, chopped
Salta little, ngari is salty
Water2 cups, for boiling

Method

5 steps
  1. 1Boil the potato and beans in salted water until very soft. Keep a little of the water.
  2. 2Roast the ngari on a dry pan, or wrapped in a banana leaf over a flame, until hot all through.
  3. 3Roast the dried chillies on the same pan until they darken slightly.
  4. 4Pound the chillies, ngari and salt into a rough paste. Add the vegetables and mash together with a splash of the cooking water.
  5. 5Mix in the spring onion and coriander and serve with rice.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
