Ingredients

4 servings
Fish6 rohu or carp pieces
Turmeric (ground turmeric)½ tsp
Saltto taste
Mustard oil2½ tbsp
Bay leaf (indian bay leaf)1
Potato2 medium, cubed
Onion1 large, sliced
Ginger garlic paste1 tbsp
Tomato1 large, chopped
Green chilli3, slit
Kashmiri chilli powder1 tsp
Water1⅔ cups
Spring onion (green onion, scallion)2 stalks, chopped
Coriander leaves (cilantro)a handful

Method

5 steps
  1. 1Rub the fish with turmeric and salt and fry until golden. Lift out.
  2. 2In the same oil, add bay leaf, potatoes and onion and fry until the onion softens.
  3. 3Add ginger garlic paste, tomato, chillies and chilli powder. Cook until the tomato breaks down.
  4. 4Add water and salt, simmer until potatoes are tender, then add the fish for 5 minutes.
  5. 5Finish with spring onion and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
