Ingredients

6 servings
Cannellini beans2 cups dry white beans, soaked
Carrot2, in rounds
Celery2 sticks, chopped
Onion1, chopped
Tomato puree¼ cup tomato paste
Tomato2, grated
Olive oil⅓ cup
Bay leaf (indian bay leaf)1
Dried oregano½ tsp
Water2 litres
Saltto taste
Lemon½, to serve

Method

4 steps
  1. 1Boil the soaked beans for 5 minutes, drain and rinse.
  2. 2Return beans to the pot with fresh water, onion, carrot, celery and bay. Simmer until nearly tender.
  3. 3Add tomato, paste, olive oil and oregano and simmer until thick and creamy.
  4. 4Salt at the end and serve with lemon.
Serve it like this

Ladle into deep bowls with a drizzle of olive oil, served with bread, olives, feta and pickled vegetables.
