Tsoureki, Greek Easter bread.

Ingredients

12 servings
Maida (all-purpose flour, plain flour)4 cups
Instant dry yeast1 tbsp
Milk⅔ cup, warm
Sugar½ cup plus 2 tbsp
Butter7 tbsp, melted
Egg4: 3 in dough, 1 to brush
Mahlab1½ tsp ground
Orangezest of 1
Almondsflaked, for top
Salt½ tsp

Method

5 steps
  1. 1Mix flour, yeast, sugar, mahlab, zest and salt. Add milk, 3 eggs and butter. Knead 10 minutes until silky.
  2. 2Rise until doubled, about 2 hours.
  3. 3Divide into 3 ropes and braid.
  4. 4Rise 45 minutes, brush with egg and scatter almonds.
  5. 5Bake at 175°C for 35 minutes.
Serve it like this

Slice thick on a board, serve with butter, jam or simply with coffee.
