Ingredients

4 servings
Pita bread2½ pitas, cut in squares
Chickpeas, boiled2½ cups cooked, hot
Curd (plain yogurt, natural yoghurt)1½ cups thick
Tahini2½ tbsp
Garlic2 cloves, crushed
Lemon juice1½ tbsp
Ghee1½ tbsp
Almonds2 tbsp, or pine nuts
Cumin powder (ground cumin)½ tsp
Flat leaf parsleya few leaves
Kashmiri chilli powdera pinch
Saltto taste

Method

4 steps
  1. 1Toast the pita squares in the oven until crisp and golden.
  2. 2Whisk curd, tahini, garlic, lemon and salt into a smooth sauce. Keep at room temperature.
  3. 3Layer bread in a dish, spoon over hot chickpeas with a little of their liquid and cumin, then pour over the yoghurt sauce.
  4. 4Fry the nuts in ghee until golden and pour the sizzling ghee over the top. Dust paprika, add parsley.
Serve it like this

Serve straight from the dish while hot, ghee and nuts glistening on top. Add pickles, raw onion and mint tea on the side.
