Ingredients

6 servings
Chicken, curry cut (bone in chicken, small pieces)600 g bone in pieces
Pork ribs300 g
Dried shiitake mushrooms8, soaked
Dried shrimp2 tbsp, soaked
Bamboo shoot150 g, sliced
Egg4 boiled and peeled, or 12 quail eggs
Prawns (shrimp)6 large
Gingera thumb, sliced
Spring onion (green onion, scallion)2 stalks
Soy sauce1 tbsp plus 1 tsp
Sugar1 tsp
Saltto taste
Water7½ cups
White pepper½ tsp

Method

5 steps
  1. 1Blanch the chicken and ribs 3 minutes and rinse.
  2. 2Brown the chicken and ribs lightly with ginger and spring onion.
  3. 3Layer in a heavy pot or clay pot: meat, mushrooms, dried shrimp, bamboo shoots. Add water, soy and sugar.
  4. 4Cover tightly and simmer on the lowest heat 3 hours, or steam the sealed pot.
  5. 5Add the eggs and prawns for the last 10 minutes. Season with salt and pepper.
Serve it like this

Bring the clay pot to the table and lift the lid there, then ladle a little of everything into small bowls.
