Ingredients

6 servings
Onion4 large, finely sliced
Butter2 tbsp
Cooking oil (vegetable oil)2 tsp
Saltto taste
Sour cream1 cup (or hung curd)
Mayonnaise¼ cup
Garlic1 clove, grated
Black pepper¼ tsp
Spring onion (green onion, scallion)1 stalk, for chives
Carrot2, in sticks
Cucumber1, in sticks

Method

4 steps
  1. 1Cook onions in butter and oil with a pinch of salt on medium low, stirring often.
  2. 2Add a splash of water whenever the pan browns and scrape it up. Cool completely.
  3. 3Chop the cooled onions and mix with sour cream, mayo, garlic, pepper and salt.
  4. 4Chill at least an hour and top with chives.
Serve it like this

Spoon into a bowl, swirl the top, scatter chives. Surround with crisps, carrot and cucumber sticks, served cold.
