Prawns (shrimp)500 g, peeled, tails on
Olive oil3 tbsp
Onion1, chopped
Garlic3 cloves
Tomato6, grated
Dried red chilli1, crumbled
Dried oregano½ tsp
Feta cheese150 g, crumbled
Flat leaf parsleychopped
Saltto taste

Method

4 steps
  1. 1Soften onion and garlic in olive oil.
  2. 2Add tomato, chilli and oregano and simmer until thick.
  3. 3Add the prawns and cook just until pink.
  4. 4Scatter feta, cover a minute or slide under the grill until soft, then add parsley.
Serve it like this

Serve in the pan, bubbling, with feta melting on top and crusty bread for the sauce.
