Classic gâteau basque.

Ingredients

Butter200 g, soft
Sugar200 g for dough, 80 g for custard
Egg2
Almondsground
Maida (all-purpose flour, plain flour)2½ cups
Baking powder1 tsp
Salta pinch
Lemonzest
Milk1⅔ cups
Egg yolk3 yolks
Cornflour (cornstarch)3 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp

Method

5 steps
  1. 1Cream the butter and 200 g sugar, beat in the eggs, then mix in almonds, flour, baking powder, salt and lemon zest. Chill 1 hour.
  2. 2Make pastry cream with the milk, yolks, remaining sugar, cornflour and vanilla. Chill.
  3. 3Roll two discs. Line a 24 cm tin with one, spread with custard and cover with the second.
  4. 4Brush with egg, score a crosshatch and bake at 175°C for 40 to 45 minutes.
  5. 5Cool completely before slicing.
Serve it like this

Serve in wedges at room temperature with coffee or a glass of cider.
