Ingredients

Tomato3 firm, finely diced
Cucumber1, finely diced
Onion1 small, finely diced
Capsicum (green capsicum, green bell pepper)1 green pepper, finely diced
Flat leaf parsleya handful, chopped
Mint leavesa few leaves, chopped
Walnuts½ cup, chopped
Pomegranate molasses1½ tbsp
Olive oil2 tbsp
Lemon juice1 tbsp
Sumac1 tsp
Kashmiri chilli powder½ tsp, or pul biber
Salt½ tsp

Method

3 steps
  1. 1Dice all the vegetables very small and even.
  2. 2Whisk molasses, oil, lemon, sumac, chilli and salt.
  3. 3Toss vegetables and herbs with the dressing and top with walnuts just before serving.
Serve it like this

Serve in a shallow bowl, walnuts on top and a drizzle of molasses, beside kebabs and flatbread.
