Pumpkinsquash, in chunks
Green beanslong beans, cut
Thin coconut milk1¼ cups
Thick coconut milk½ cup
Prawns (shrimp)peeled
Onion1, sliced
Garlic4 cloves
Ginger2.5 cm
Fish sauce1 tbsp
Cooking oil (vegetable oil)1 tbsp
Green chilli2 long chillies

Method

4 steps
  1. 1Saute garlic, onion and ginger in oil until soft.
  2. 2Add thin coconut milk and pumpkin and simmer until the pumpkin is almost tender.
  3. 3Add beans, chillies and fish sauce and cook 3 minutes, then prawns until pink.
  4. 4Stir in thick coconut milk and simmer 1 minute.
Serve it like this

Serve in a bowl with the prawns on top and long beans tucked around, with steamed rice.
