Ingredients

4 servings
Sweet corn kernels (corn kernels)2 cups corn kernels (dried maize, soaked, traditionally)
Rajma, dry (dried red kidney beans)1 cup, soaked overnight
Onion1, chopped
Tomato2, chopped
Carrot1, diced
Potato1, diced
Garlic2 cloves
Curry powder1 tsp
Cooking oil (vegetable oil)2 tbsp
Coriander leaves (cilantro)to finish

Method

4 steps
  1. 1Pressure cook the beans until soft.
  2. 2Fry onion and garlic in oil, then add tomato and curry powder.
  3. 3Add carrot, potato, corn and beans with some cooking water. Simmer until vegetables are tender.
  4. 4Finish with coriander and salt.
Serve it like this

Serve in a deep bowl with coriander on top and avocado slices or chapati on the side.
