Ingredients

4 servings
Spinach1 bunch, blanched
Green peas1 cup, boiled
Potato2 medium, boiled
Paneer½ cup, grated
Ginger2.5 cm
Green chilli2
Coriander leaves (cilantro)a handful
Chaat masala1 tsp
Garam masala½ tsp
Besan (chickpea flour, gram flour)⅓ cup, roasted
Cashews12
Cooking oil (vegetable oil)for shallow frying
Saltto taste

Method

4 steps
  1. 1Blanch spinach, squeeze dry and chop finely with peas, ginger, chilli and coriander.
  2. 2Mix with mashed potato, paneer, spices, roasted besan and salt. Shape into small discs and press a cashew on top.
  3. 3Rest in the fridge for 15 minutes.
  4. 4Shallow fry till crisp on both sides.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
