White maize meal (white cornmeal, maize meal)800 g maize meal, fermented 2 to 3 days (or 1 kg ready corn dough)

Fish6 small tilapia or herring, scored
Cooking oil (vegetable oil)for frying (about 60 ml absorbed)

- 1Mix maize meal with water to a thick dough, cover and ferment at room temperature for 2 to 3 days until sour.
- 2Cook half the dough with water, stirring hard, into a thick paste (aflata). Mix with the raw half and salt.
- 3Shape into balls, wrap tightly in dried corn husks or foil, and boil, covered, for 2 to 3 hours.
- 4Season and fry the fish until crisp. Grind tomato, onion, pepper and salt into a rough fresh sauce.
Serve it like thisUnwrap the kenkey on a plate, lay the fish alongside and spoon over raw pepper sauce and shito. Eat with your hands.
