Ingredients

4 servings
Pork4 thin boneless loin steaks
Maida (all-purpose flour, plain flour)⅓ cup, for dredging
Egg2, beaten
Breadcrumbs1 cup, fine and dry
Cooking oil (vegetable oil)about 1/4 cup, for shallow frying
Button mushroom250 g, sliced
Onion1 medium, finely chopped
Bacon (streaky rashers, streaky bacon)2 rashers, diced
Butter1 tbsp
Beef stock (beef broth)1 cup
Fresh cream (thickened cream, heavy cream)⅓ cup
Flat leaf parsleya small handful, chopped
Saltto taste
Black peppera few grinds

Method

5 steps
  1. 1Place each steak between cling film and pound to about 5 mm thick. Season with salt and pepper.
  2. 2Dredge in flour, dip in egg, then press lightly into breadcrumbs. Do not press the crumbs hard.
  3. 3Shallow fry in hot oil, swirling the pan, until deep golden on both sides. Drain on paper.
  4. 4For the gravy, fry the bacon in butter, add onion and mushrooms and cook until browned.
  5. 5Pour in the stock, simmer to reduce by a third, then stir in cream and parsley. Season.
Serve it like this

Lay the schnitzel on a warm plate, spoon the mushroom gravy half over it so some crust stays crisp, scatter parsley and serve with spätzle.
