Ingredients

Maida (all-purpose flour, plain flour)3⅓ cups
Butter⅔ cup, cold, cubed
Turmeric (ground turmeric)1 tsp
Curry powder1½ tbsp, split
Saltto taste
Waterfor dough and filling
Beef400 g mince
Onion1, chopped
Spring onion (green onion, scallion)2, chopped
Garlic2 cloves
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)½, chopped
Dried thyme½ tsp
Breadcrumbs⅓ cup
Cooking oil (vegetable oil)1 tbsp
Egg1, for wash

Method

4 steps
  1. 1Rub butter into maida, turmeric, half the curry powder and salt until crumbly. Add cold water to form a dough. Chill 30 minutes.
  2. 2Fry onion, spring onion, garlic, pepper and thyme, add beef and the rest of the curry powder, then water and breadcrumbs. Simmer until thick.
  3. 3Roll dough, cut 15 cm circles, fill one half, fold and crimp with a fork.
  4. 4Brush with egg and bake at 200°C for 25 minutes.
Serve it like this

Serve warm on paper, or tucked into a soft bun, with a cold drink.
