Water½ cup
Butter60 g, cubed
Maida (all-purpose flour, plain flour)½ cup plus 1 tbsp
Egg3, beaten
Gruyère cheese80 g, finely grated, divided
Cumin seeds1½ tsp, toasted
Green chilli2, very finely chopped
Salt½ tsp plus a pinch
Hung curd (greek yogurt)⅔ cup
Coriander leaves (cilantro)a big handful, finely chopped

- 1Heat the oven to 200°C and line a tray. Bring the water, butter and salt to a boil in a pan on medium heat.
- 2Tip in all the flour at once and stir on low heat for 2 minutes until the dough forms a ball.
- 3Cool 5 minutes. Beat in the 3 eggs one at a time, beating until smooth after each.
- 4Fold in most of the cheese, the toasted cumin and the green chilli. Spoon walnut sized mounds 3 cm apart and top with the remaining cheese.
- 5Bake in the oven at 200°C for 20 minutes, then at 180°C for 8 minutes. Do not open the door for the first 15 minutes.
- 6Pierce each puff with a skewer and rest 2 minutes. Mix the hung curd with coriander, lemon juice and a pinch of salt for the dip.
Serve it like thisPile the warm gougères into a small pyramid on a board, with the coriander dip in a little bowl and a scatter of toasted cumin around.
