Cooking oil (vegetable oil)3 tbsp

Chunjang5 tbsp

Garlic3 cloves, minced

Ginger1 tsp, minced

Porkpork shoulder or belly, 1 cm dice

Onion2 large, diced

Potato1 medium, diced

Zucchini (courgette, baby marrow)1 small, diced

Cabbage1 cup, diced

Sugar1 tbsp

Oyster sauce2 tsp

Water1⅔ cups

Cornflour (cornstarch)1½ tbsp potato starch or cornflour, in 3 tbsp water

Wheat noodles250 g dry thick wheat noodles, or 450 g fresh

Method

5 steps

1Fry the chunjang in the oil over low heat for 2 to 3 minutes, stirring. Scoop the paste out and keep the oil.
2In the same oil fry the garlic, ginger and pork until no pink remains, then add onion, potato, zucchini and cabbage. Cook 4 minutes.
3Return the fried paste with the sugar and oyster sauce, stir 1 minute, add the water and simmer 8 minutes until the potato is tender.
4Stir in the starch slurry and cook 1 minute until glossy.
5Boil the noodles, rinse briefly in warm water and drain. Top with sauce and cucumber, and mix at the table.

Serve it like this

Noodles in a wide bowl with the black sauce ladled on top and cucumber matchsticks. Yellow pickled radish and raw onion with vinegar on the side.
