Beef short ribs, bone in800 g flanken cut, 1 cm thick
Soy sauce4 tbsp
Brown sugar2 tbsp
Pear1 small, grated
Garlic6 cloves, grated
Ginger2 cm piece, grated
Sesame oil2 tsp
Spring onion (green onion, scallion)3 stalks, sliced
Black pepper¼ tsp
Sesame seeds1½ tsp
Macaroni¾ cup
Vinegar1 tsp
Mayonnaise3 tbsp
Milk2 tbsp
Carrot1 small, grated
Salt½ tsp
Cooked rice4 scoops, hot
Napa cabbage kimchi½ cupMethod
- 1Mix the soy, sugar, pear, garlic, ginger, sesame oil, half the spring onion and pepper. Coat the ribs and marinate 1 hour in the fridge.
- 2Boil the macaroni in salted water for 2 minutes longer than the packet says. Drain and toss with the vinegar while hot.
- 3Cool the macaroni 10 minutes, then mix with the mayonnaise, milk, carrot, salt and a pinch of pepper. Chill.
- 4Heat a grill pan on high heat. Cook the ribs 3 to 4 minutes a side in batches.
- 5Rest the ribs 3 minutes, then cut between the bones.
- 6Plate two scoops of rice, a scoop of mac salad, the ribs and kimchi. Sprinkle sesame and the rest of the spring onion.
Serve it like thisUse a rice scoop for two neat domes of rice and one of mac salad on a large plate, fan the ribs against them and add a little heap of kimchi.
