Ingredients

3 servings
Poha (flattened rice)2 cups, thick
Onion1½ medium, chopped
Peanuts2 tbsp
Cooking oil (vegetable oil)2 tbsp
Mustard seeds1 tsp
Cumin seeds½ tsp
Curry leaves1 sprig
Green chilli2, chopped
Turmeric (ground turmeric)½ tsp
Sugar2 tsp
Saltto taste
Lemon juice1 tbsp
Coriander leaves (cilantro)a handful, chopped
Fresh grated coconut2 tbsp, to finish

Method

6 steps
  1. 1Put the poha in a colander and rinse under running water for a few seconds. Drain, then toss with the salt and sugar and leave it alone.
  2. 2Heat the oil and fry the peanuts until golden. Lift them out.
  3. 3In the same oil, add mustard seeds. When they pop, add cumin, curry leaves and green chilli.
  4. 4Add the onion and cook on medium until soft and translucent. Stir in the turmeric.
  5. 5Tip in the poha and fold gently until evenly yellow. Cover and steam on low.
  6. 6Switch off. Add lemon juice, the peanuts, coriander and grated coconut. Toss once and serve hot.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
