Ingredients

4 servings
Brinjal (eggplant, aubergine)4 medium
Minced mutton (goat mince, ground goat)250 g mince
Onion1 large
Garlic3 cloves
Tomato2, chopped
Tomato puree2 tbsp
Capsicum (green capsicum, green bell pepper)½
Flat leaf parsleya handful
Cooking oil (vegetable oil)for frying (about 1/4 cup absorbed)
Black pepper¼ tsp
Saltto taste
Water⅔ cup

Method

4 steps
  1. 1Peel the brinjals in stripes and fry them whole until golden and soft.
  2. 2Cook the onion, garlic and capsicum until soft, add the mince and brown it, then the tomato and parsley.
  3. 3Slit each brinjal down the middle, open into a pocket and fill. Top with a tomato slice and some capsicum.
  4. 4Pour tomato paste mixed with water around them and bake at 190 C until bubbling.
Serve it like this

Serve hot in the baking dish with rice pilaf and a bowl of yoghurt or cacık.
