Carrot2, diced

Celery2 stalks, diced

Leek1, sliced

Onion1, chopped

Butter1½ tbsp

Vegetable stock (vegetable broth)5 cups

Sausages (snags, bangers)4 Wiener sausages, sliced

Method

4 steps

1Soften onion, leek, carrot and celery in butter.
2Add potatoes, stock, marjoram and bay. Simmer until the potatoes are very soft.
3Mash or blend about half the soup, leaving chunks.
4Add the sausages and cream and heat through. Season and add parsley.

Serve it like this

Ladle into deep bowls, float a few sausage coins on top, sprinkle parsley and serve with rye bread.
