Ingredients

6 servings
Puff pastry2 sheets, chilled
Egg6 boiled and halved, plus 1 for glaze
Coconut oil1 tbsp
Onion2 large, thinly sliced
Ginger1.5 cm, chopped
Green chilli2, chopped
Curry leaves1 sprig
Tomato1 small, chopped
Turmeric (ground turmeric)¼ tsp
Kashmiri chilli powder1 tsp
Garam masala½ tsp
Black pepper¼ tsp
Saltto taste

Method

4 steps
  1. 1Fry onions in coconut oil until soft and golden; add ginger, chilli and curry leaves.
  2. 2Add tomato and spices and cook to a dry masala.
  3. 3Cut pastry into 12 squares; put masala and half an egg in each, fold into triangles or rectangles and seal.
  4. 4Brush with beaten egg and bake at 200 C for 20 minutes.
Serve it like this

Serve warm on a plate with tomato ketchup and a glass of strong tea.
