Fish600 g seer or pomfret steaks
Lemon juice2 tbsp
Garlic3 cloves, crushed
Turmeric (ground turmeric)¼ tsp
Black pepper1 tsp, crushed
Onion2, in rings
Tomato3, in rings
Red bell pepper (red capsicum, red pepper)1, in rings
Capsicum (green capsicum, green bell pepper)1, in rings
Green chilli2, slit
Ginger2 cm, julienned
Kokum3 pieces, rinsed
Thin coconut milk¾ cup
Thick coconut milk¾ cup
Red palm oil1½ tbsp
Coconut oil1½ tbsp
Mustard seeds1 tsp
Curry leaves2 sprigs
Coriander leaves (cilantro)a handful

Method

6 steps
  1. 1Rub the fish with lemon juice, garlic, turmeric, pepper and 1 tsp salt. Rest 15 minutes.
  2. 2In a wide clay or heavy pot, layer half the onion, tomato, peppers, ginger and green chilli. Lay the fish on top and cover with the rest of the vegetables and the kokum.
  3. 3Pour in the thin coconut milk and red palm oil. Cover and cook on medium low heat for 12 minutes.
  4. 4Pour in the thick coconut milk and simmer uncovered on low heat for 4 minutes. Do not boil.
  5. 5Heat the coconut oil in a small pan on medium heat, add mustard seeds and when they pop add curry leaves. Pour over the stew.
  6. 6Scatter coriander and serve from the pot.
Serve it like this

Bring the pot to the table on a wooden board. Spoon one steak and its peppers into a shallow bowl, pour sauce around, and top with the crackling curry leaves.
