Ingredients

4 servings
Soya chunks1¾ cups dry
Coconut oil2 tbsp
Fresh grated coconut¼ cup coconut slivers
Shallots12, sliced
Ginger2.5 cm, julienned
Garlic4 cloves, sliced
Green chilli2, slit
Curry leaves2 sprigs
Tomato1, chopped
Turmeric (ground turmeric)¼ tsp
Kashmiri chilli powder2 tsp
Coriander powder (ground coriander)1 tbsp
Garam masala1 tsp
Black pepper1 tsp, crushed
Fennel seeds½ tsp, crushed
Saltto taste

Method

4 steps
  1. 1Boil the soya chunks in salted water for 5 minutes, rinse and squeeze dry.
  2. 2Fry the coconut slivers in coconut oil until golden, then add shallots, ginger, garlic, chillies and curry leaves and fry until browned.
  3. 3Add the tomato and powdered spices and cook until the oil separates.
  4. 4Add the soya chunks and roast on medium heat, stirring often, until dark and dry. Finish with pepper and fennel.
Serve it like this

Serve in a steel plate with Kerala parotta or matta rice, sliced onions and a wedge of lemon.
