Ingredients

4 servings
Curd (plain yogurt, natural yoghurt)1⅔ cups sour curd
Water¾ cup
Shallots4, sliced
Ginger1.5 cm, chopped
Green chilli2, slit
Turmeric (ground turmeric)¼ tsp
Coconut oil1 tbsp
Mustard seeds½ tsp
Fenugreek seedsa pinch
Dried red chilli1
Curry leavesa sprig
Saltto taste

Method

3 steps
  1. 1Whisk curd with water, turmeric and salt until smooth.
  2. 2Heat coconut oil, splutter mustard and fenugreek, then shallots, ginger, chillies and curry leaves.
  3. 3Turn heat to low, pour in the buttermilk and stir until just warm and frothy. Do not boil.
Serve it like this

Serve warm in a bowl to pour over rice, with a thoran and fried fish or papadam.
