Ingredients

Celery1 head, cut in 3 cm pieces
Lamb (lamb or tender mutton)500 g, cubed
Onion2, chopped
Flat leaf parsley2 bunches, chopped
Mint leaves1 bunch, chopped
Cooking oil (vegetable oil)¼ cup
Turmeric (ground turmeric)1 tsp
Lemon juice3 tbsp
Saffrona pinch, steeped
Saltto taste
Black pepper½ tsp
Waterabout 3 1/2 cups

Method

4 steps
  1. 1Brown onion and lamb in half the oil with turmeric.
  2. 2Add water, salt and pepper, cover and simmer until the lamb is nearly tender.
  3. 3Fry celery in the remaining oil until lightly golden, then add parsley and mint and fry until the herbs darken.
  4. 4Add the celery and herbs to the lamb with lemon juice and saffron and simmer until the celery is tender.
Serve it like this

Serve in a bowl beside a platter of saffron rice, with yoghurt and herbs on the side.
