Ingredients

5 servings
Minced mutton (goat mince, ground goat)500 g lamb mince
Rice⅓ cup, rinsed
Onion1 large, grated
Chickpeas, dry½ cup, soaked overnight
Potato3 medium, halved
Aloo bukhara (dried sour plums or prunes)6 dried sour plums
Saffrona pinch, steeped
Turmeric (ground turmeric)½ tsp
Mint leaves1 tsp dried
Beef stock (beef broth)1.8 litres
Black pepper½ tsp
Saltto taste

Method

5 steps
  1. 1Simmer the chickpeas in the stock until nearly tender.
  2. 2Mix mince, rice, grated onion, pepper and salt. Knead well.
  3. 3Shape into 5 big balls, each pressed around a sour plum.
  4. 4Lower the meatballs into the simmering stock with potatoes, turmeric and saffron. Cook gently until cooked through.
  5. 5Sprinkle with dried mint and serve one meatball per bowl with broth, chickpeas and potato.
Serve it like this

Serve one big meatball per bowl, cut open to show the plum, with broth, chickpeas and potato. Bread alongside.
