Ingredients

4 servings
Sweet potatokūmara, in thick chips
Cornflour (cornstarch)2 tbsp
Cooking oil (vegetable oil)3½ tbsp
Salt1 tsp
Paprika½ tsp
Sour cream½ cup, to dip
Red chilli saucesweet chilli sauce, to dip

Method

4 steps
  1. 1Soak the cut kūmara in cold water for 20 minutes, then dry very well.
  2. 2Toss with cornflour, then oil, salt and paprika.
  3. 3Spread on two trays, not touching, and roast at 220°C for 25 to 30 minutes, turning once.
  4. 4Serve with sour cream drizzled with sweet chilli.
Serve it like this
