Ingredients

Carrot2 medium, cubed
Sweet potato1 medium, cubed
Elephant foot yam1 cup, cubed
Potato1 medium, cubed
Green peas¾ cup
Onion2 medium, sliced
Tomato2 medium, chopped
Ginger garlic paste1 tbsp
Kashmiri chilli powder1¼ tsp
Turmeric (ground turmeric)½ tsp
Whole spicescinnamon, cloves, cardamom
Jaggery1½ tbsp
Vinegar2 tbsp
Cooking oil (vegetable oil)2 tbsp
Raisins2 tbsp
Coriander leaves (cilantro)a handful
Saltto taste
Water1⅔ cups

Method

4 steps
  1. 1Fry the cubes of potato, sweet potato and yam in a little oil until golden on the outside. Set aside.
  2. 2In the same pan, fry whole spices and onions until golden, add ginger garlic paste, tomatoes, chilli and turmeric and cook until soft.
  3. 3Add carrots, peas, fried vegetables, salt and water. Cover and simmer until all are tender, 15 minutes.
  4. 4Add jaggery, vinegar and raisins and simmer 5 minutes. Finish with coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
