Pumpkin3 cups, cubed, skin on
Cooking oil (vegetable oil)1 tbsp
Mustard seeds½ tsp
Cumin seeds½ tsp
Fenugreek seeds¼ tsp
Asafoetidaa pinch
Green chilli2, chopped
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)½ tsp
Jaggery1 tbsp
Peanuts2 tbsp, roasted and crushed
Coriander leaves (cilantro)a handful

- 1Heat oil, crackle mustard, cumin and fenugreek, add asafoetida and chilli.
- 2Add pumpkin, turmeric and salt. Cover and cook on low 10 to 12 minutes until soft.
- 3Add jaggery, chilli powder and peanuts. Stir, mashing a few pieces, and cook 2 minutes. Finish with coriander.
Serve it like thisServe hot on a plate, with a few fresh coriander leaves on top.
