Ingredients

3 servings
Besan (chickpea flour, gram flour)¾ cup
Water2 cups
Onion1 medium, chopped
Garlic8 cloves, crushed
Green chilli3, chopped
Curry leaves8 to 10
Mustard seeds½ tsp
Cumin seeds½ tsp
Asafoetidaa pinch
Turmeric (ground turmeric)½ tsp
Cooking oil (vegetable oil)2 tbsp
Coriander leaves (cilantro)a handful
Saltto taste

Method

4 steps
  1. 1Whisk the besan into the water with turmeric and salt until smooth.
  2. 2Heat oil, crackle mustard and cumin, add asafoetida, curry leaves, garlic and chilli and fry until the garlic is golden. Add onion and cook until soft.
  3. 3Pour in the besan mix, stirring constantly, and cook on low until thick and glossy.
  4. 4Cover for 2 minutes, then finish with coriander. Serve hot with jowar bhakri, onion and thecha.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
