Ingredients

4 servings
Potato4 large, cut into fries
Cooking oil (vegetable oil)for frying, about 5 tbsp absorbed
Butter1 tbsp
Maida (all-purpose flour, plain flour)1 tbsp
Milk½ cup
Cheddar cheese1¼ cups, grated
Kashmiri chilli powder½ tsp
Jalapeño2, sliced (or pickled green chillies)
Spring onion (green onion, scallion)2 stalks, sliced
Sour cream¼ cup
Saltto taste

Method

5 steps
  1. 1Soak cut fries in cold water 15 minutes, then dry very well.
  2. 2Fry at 160 C until soft and pale, drain. Raise to 190 C and fry again until crisp.
  3. 3Melt butter, stir in flour for a minute, whisk in milk until thick.
  4. 4Off the heat, stir in cheddar and chilli powder until smooth.
  5. 5Salt the fries, pour over the sauce and top with jalapeños, spring onion and sour cream.
Serve it like this

Pile in a shallow tray or skillet, sauce poured down the middle, toppings scattered. Serve hot with forks and napkins.
