Lobia, dry (dried black eyed peas)1 cup lobia, soaked 6 hours
Water3 cups
Cooking oil (vegetable oil)2 tbsp
Cumin seeds½ tsp
Onion1 large, finely chopped
Ginger garlic paste1 tbsp
Green chilli1 or 2, chopped
Tomato2, pureed
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)1 tsp
Coriander powder (ground coriander)2 tsp
Garam masala1 tsp
Dry mango powder½ tsp

- 1Pressure cook the soaked lobia with water and a little salt for 3 whistles, then let the pressure release naturally.
- 2Crackle the cumin in oil and fry the onion until golden. Add ginger garlic paste and chilli.
- 3Add the tomato puree and powdered spices except garam masala and amchur, and cook until the oil separates.
- 4Add the lobia with its cooking water and simmer, mashing a few beans. Finish with garam masala, amchur and coriander.
Serve it like thisServe hot in a bowl with steamed rice or phulkas, sliced onion and lemon on the side.
