Ingredients

Chicken, boneless500 g boneless thighs, in 3 cm pieces
Hung curd (greek yogurt)⅓ cup
Fresh cream (thickened cream, heavy cream)3 tbsp
Processed cheese (american cheese)2 tbsp, finely grated
Ginger garlic paste1 tbsp
Green chilli2, ground to a paste
Cardamom¼ tsp
White pepper¼ tsp
Lemon juice1 tbsp
Soy sauce2 tbsp
Honey1 tbsp
Ginger1 tsp, grated
Butter1 tbsp
Spring onion (green onion, scallion)4, white and pale green parts in 3 cm pieces
Cooking oil (vegetable oil)2 tsp
Sesame seeds1 tsp
Saltto taste

Method

5 steps
  1. 1Soak 12 bamboo skewers in water. Mix the hung curd, cream, cheese, ginger garlic paste, chilli paste, cardamom, white pepper, lemon and salt. Coat the chicken and marinate 30 minutes.
  2. 2Simmer the soy, honey, ginger and 2 tbsp water in a small pan on low heat for 3 minutes. Off the heat, whisk in the butter.
  3. 3Thread the chicken onto the skewers, alternating with pieces of spring onion.
  4. 4Heat a grill pan on high heat and brush with oil. Grill the skewers for 8 to 10 minutes, turning, until charred in spots and no pink remains. Brush with tare for the last 2 minutes.
  5. 5Brush once more with tare and sprinkle with sesame.
Serve it like this

Lay the skewers side by side on a long plate at a slight angle. Brush with a last coat of tare, scatter sesame and add a small dish of mint chutney.
