Classic malva pudding.

Ingredients

8 servings
Maida (all-purpose flour, plain flour)1¼ cups
Sugar1 cup (half batter, half sauce)
Egg1
Apricot jam (apricot preserves)2 tbsp
Baking soda (bicarb soda, bicarbonate of soda)1 tsp
Vinegar2 tsp
Butter2 tbsp batter, rest for sauce
Milk½ cup
Fresh cream (thickened cream, heavy cream)¾ cup
Water⅓ cup
Salta pinch

Method

4 steps
  1. 1Beat half the sugar with the egg until pale. Beat in jam, a spoon of melted butter, vinegar and milk.
  2. 2Sift in flour, soda and salt and fold. Pour into a buttered dish.
  3. 3Bake at 180 C until risen and deep brown.
  4. 4Heat cream, the rest of the butter and sugar and the water until melted. Pour over the hot pudding as soon as it comes out.
Serve it like this

Serve warm in bowls with hot custard or a scoop of vanilla ice cream melting over.
