Ingredients

6 servings
Mutton (goat meat)1.2 kg lamb, on the bone
Jameed3¼ cups liquid jameed
Basmati rice2 cups, soaked
Ghee3 tbsp samneh
Almonds⅓ cup, fried
Turmeric (ground turmeric)½ tsp
Whole spicescardamom, bay, cinnamon
Onion1
Chapati, cooked3 shrak breads or thin chapatis
Flat leaf parsleya handful
Saltto taste
Water6 cups

Method

5 steps
  1. 1Boil the lamb, skim off the foam, then add the onion and whole spices. Simmer until nearly tender.
  2. 2Whisk the jameed with a ladle of broth and bring to a gentle boil, stirring constantly in one direction.
  3. 3Move the lamb into the jameed and simmer until very tender.
  4. 4Cook the rice with ghee, turmeric and salt until fluffy.
  5. 5Lay the bread on a large tray, moisten with jameed, pile on rice, then lamb, almonds and parsley. Serve extra sauce alongside.
