Ingredients

4 servings
Maida (all-purpose flour, plain flour)1 cup
Egg1
Milk1 cup
Sugar2 tbsp
Butter1 tbsp, melted, plus for the pan
Cheddar cheese1 cup Edam (queso de bola) or mild cheddar, grated
Chocolate syrup4 tbsp Nutella or chocolate sauce
Condensed milk (sweetened condensed milk)3 tbsp, or cajeta

Method

4 steps
  1. 1Whisk flour, egg, milk, sugar and melted butter into a smooth, thin batter. Rest 10 minutes.
  2. 2Heat a nonstick pan on medium low, wipe with butter and pour a thin layer of batter. Cook without flipping until the underside is deep golden and crisp, 3 to 4 minutes.
  3. 3Scatter cheese over the top and spread with chocolate or condensed milk.
  4. 4Roll up tightly while still in the pan and slide out. It crisps as it cools.
Serve it like this

Serve one or two crisp marquesitas wrapped in a napkin, eaten immediately while still warm and crunchy.
