Matki sprouts (moth bean sprouts)2½ cups sprouted matki
Onion1 medium, chopped
Tomato1 medium, chopped
Fresh grated coconut3 tbsp
Garlic5 cloves
Ginger1.5 cm
Goda masala2½ tsp
Red chilli powder (indian red chili powder)1 tsp
Turmeric (ground turmeric)½ tsp
Mustard seeds½ tsp
Cumin seeds½ tsp
Asafoetidaa pinch
Curry leaves8 to 10
Cooking oil (vegetable oil)2 tbsp
Jaggery1 tsp
Kokum2 petals
Coriander leaves (cilantro)a handful

- 1Grind the coconut, garlic and ginger with a splash of water to a coarse paste.
- 2Heat oil, crackle mustard and cumin, add asafoetida and curry leaves, then onion. Cook until golden.
- 3Add the coconut paste, tomato, goda masala, chilli and turmeric and cook until oil separates.
- 4Add sprouts, salt, kokum, jaggery and water. Cover and cook 12 to 15 minutes until the sprouts are tender but still have bite.
- 5Finish with coriander and serve.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
