Ingredients

4 servings
Olive oil1 tbsp
Onion1, chopped
Carrot1, chopped
Potato1 small, cubed
Tomato puree2 tbsp, or 1 tbsp tomato paste
Cumin powder (ground cumin)1 tsp
Masoor dal (red lentils)1 cup red lentils, rinsed
Vegetable stock (vegetable broth)5 cups
Salt1 tsp
Butter1½ tbsp
Kashmiri chilli powder1 tsp pul biber or Kashmiri chilli
Mint leaves1 tsp dried mint
Lemonwedges to serve

Method

4 steps
  1. 1Cook onion and carrot in oil 5 minutes, then stir in tomato puree and cumin for 1 minute.
  2. 2Add lentils, potato and stock. Simmer 25 minutes until everything is very soft.
  3. 3Blend until smooth and season with salt.
  4. 4Melt butter until foaming, take off the heat and stir in chilli and dried mint. Drizzle over each bowl.
Serve it like this

Serve in bowls with a red ribbon of chilli butter, a pinch of dried mint and a lemon wedge. Hot, with crusty bread.
