Classic misir wat.

Ingredients

4 servings
Masoor dal (red lentils)1 cup, rinsed
Onion2 large, finely chopped
Cooking oil (vegetable oil)3 tbsp
Berbere spice blend2 tbsp
Garlic4 cloves, minced
Ginger2.5 cm, minced
Tomato puree⅓ cup
Water3½ cups
Saltto taste

Method

5 steps
  1. 1Cook the onions in a dry heavy pan on low until soft and starting to brown. Add a splash of water if they catch.
  2. 2Add the oil and berbere and fry on low.
  3. 3Add garlic, ginger and tomato puree and cook until thick.
  4. 4Tip in the lentils and water. Simmer, stirring often, until the lentils collapse.
  5. 5Season with salt and rest 5 minutes off the heat.
Serve it like this

Spoon onto injera beside gomen and kik alicha as part of a colourful fasting platter. Serve warm, never piping hot, so it can be scooped by hand.
