Ingredients

4 servings
Carrot5 medium, sliced in coins
Garlic2 cloves, minced
Cumin powder (ground cumin)1 tsp
Kashmiri chilli powder1 tsp, or sweet paprika
Cinnamon powdera pinch
Lemon juice2 tbsp
Olive oil2 tbsp
Flat leaf parsleya handful, chopped
Salt¾ tsp

Method

3 steps
  1. 1Boil carrots in salted water until just tender.
  2. 2Warm the oil gently with garlic, cumin, paprika and cinnamon.
  3. 3Toss the drained carrots in the spiced oil with lemon and salt. Cool, then add parsley.
Serve it like this

Serve at room temperature in a small shallow bowl, drizzled with a little more oil and fresh parsley.
