Ingredients

4 servings
Brinjal (eggplant, aubergine)2 large
Tomato4, grated
Garlic3 cloves, crushed
Olive oil3 tbsp
Cumin powder (ground cumin)1½ tsp
Kashmiri chilli powder1½ tsp, for paprika
Coriander leaves (cilantro)⅓ cup
Flat leaf parsley¼ cup
Lemon juice1 tbsp
Saltto taste

Method

4 steps
  1. 1Char or roast the brinjals until soft, then peel and chop.
  2. 2Cook garlic in oil for 30 seconds, then add tomato, cumin and paprika. Cook until thick.
  3. 3Add the brinjal and mash it into the sauce. Cook, stirring, until thick.
  4. 4Stir in herbs, lemon and salt.
Serve it like this

Spread in a shallow bowl, drizzle olive oil and scatter herbs. Serve warm or at room temperature with crusty bread.
