Ingredients

4 servings
Maida (all-purpose flour, plain flour)2 cups
Cooking oil (vegetable oil)4 tbsp, for dough and pan
Egg3
Minced mutton (goat mince, ground goat)250 g lamb or mutton mince
Onion1, finely chopped
Spring onion (green onion, scallion)3, sliced
Coriander leaves (cilantro)a handful
Baharat1½ tsp
Black pepper¼ tsp
Saltto taste
Waterabout 1/2 cup

Method

4 steps
  1. 1Knead flour, salt, water and a little oil into a soft, smooth dough. Divide into 4 balls, coat in oil and rest 1 hour.
  2. 2Cook the mince with onion, baharat and pepper until browned and dry. Cool, then mix with spring onion, coriander and beaten eggs.
  3. 3Stretch each ball on an oiled counter until very thin. Spoon filling in the centre and fold the sides over into a square parcel.
  4. 4Cook on a hot oiled tawa, pressing gently, until golden and crisp on both sides.
Serve it like this

Cut into squares and stack on a plate with lemon wedges, sliced chilli and a hot chilli sauce. Serve straight from the pan.
