Classic Nepali dal bhat.

Ingredients

4 servings
Rice1½ cups
Masoor dal (red lentils)¾ cup
Turmeric (ground turmeric)1 tsp
Ghee2 tbsp
Cumin seeds1 tsp
Timur (sichuan peppercorns)a few berries, crushed
Garlic4 cloves
Ginger2.5 cm
Potato2, cubed
Cauliflower¼ head, florets
Tomato1, chopped
Spinach1 bunch (or rayo saag)
Mustard oil2 tbsp
Green chilli2
Dried red chilli2
Waterfor rice and dal
Saltto taste

Method

4 steps
  1. 1Cook rice. Pressure cook the dal with turmeric, salt and water until soft.
  2. 2Temper the dal: heat ghee, fry cumin, dried chilli, timur and half the garlic until golden and pour in.
  3. 3For tarkari, heat mustard oil, fry cumin, ginger and the rest of the garlic, add turmeric, potato, cauliflower and tomato. Cover and cook.
  4. 4Sauté the spinach with green chilli and salt in a little mustard oil.
Serve it like this

Serve on a steel thali: rice in the centre, dal in a bowl, tarkari, saag and a spoon of achar around it.
