Ingredients

6 servings
Chicken, curry cut (bone in chicken, small pieces)800 g chicken pieces
Onion1 large, half sliced, half blended
Ginger2.5 cm
Garlic3 cloves
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, or to taste
Salt1½ tsp
Tomato3, blended
Tomato puree¼ cup tomato paste
Peanut butter¾ cup unsweetened
Water6 cups

Method

4 steps
  1. 1Steam the chicken with sliced onion, blended onion, ginger, garlic, scotch bonnet and salt in a covered pot for 10 minutes.
  2. 2Add blended tomato, tomato paste and 4 cups water. Simmer 15 minutes.
  3. 3Whisk peanut butter with 2 cups hot water to a smooth paste and stir into the pot.
  4. 4Simmer 30 minutes, stirring often, until oil rises to the surface.
Serve it like this

Serve in deep bowls with a rice ball or fufu in the centre and chicken around it. Hot, with extra chilli on the side.
